Soft cheese should be eaten soon after purchase (curds). Hard cheese will usually keep for several months. Larger pieces tend to keep longer than shredded cheese. Opened cheese rewrapped properly and stored between 30 and 40 degrees is best if used within three to four weeks. The best if used by date is to tell you how long the product will retain best flavor and quality. This is not a safety date. Food products may be used after the best used by date if the product has been properly stored.
Mold may develop on the surface of cheese. Although most molds are harmless, to be safe, trim until the mold is removed. Trim around the mold spot until you’ve removed all the areas of mold. Use the remaining cheese as quick as possible.
Curds and Whips freeze well. If you are planning to keep them for a longer period of time, or if you order in larger amounts, place enough for a serving in freezer bag and freeze. You can freeze cheese blocks but we never recommend it, it will crumble and not come out the same as it was before. If you do freeze cheese, plan on letting it thaw slowly in your refrigerator. This could take up to 48 hours for a large block of cheese.
