Soft cheese should be eaten soon after purchase (curds). Hard cheese will usually keep for several months. Larger pieces tend to keep longer than shredded cheese. Opened cheese rewrapped properly and stored between 30 and 40 degrees is best if used within three to four weeks. The best if used by date is to tell you how long the product will retain best flavor and quality. This is not a safety date. Food products may be used after the best used by date if the product has been properly stored.
